Kathy Shaw holds three one-month-old piglets at the farm she owns with her husband in Auburn on Monday. Shaw said Valley View Farm has been equally busy with babies and fresh greens. The days of farmers taking time off in the winter are long gone, she said. Thanks to a high-tunnel greenhouse that she and her husband, Joe Gray, built last fall, the tops of carrots are showing above ground and spinach will be ready to pick by the end of next week. Four baby goats were born around the same time as the pigs, Shaw said.
