Baking cakes for soldiers

Gayle Bean and Tricia Thurston prepare cakes that will be baked in canning jars, sealed, then sent to local servicemen serving in Iraq. Anita Murphy reads the recipe and Donna Chaisson looks on. The women are members of the Rumford American Legion Auxiliary, and the cakes are part of a goodie box that will be mailed in a couple of weeks. Besides the cakes, auxiliary members are knitting shoulder shawls and collecting snacks to send to the war zone. Anyone who would like to donate snack items may drop them off at the Legion Hall on upper Congress Street.

Members of the Rumford American Legion Auxiliary plan to send at least a dozen shoulder shawls to local soldiers serving in Iraq. Along with the shawls, they are also sending canned cakes, and a variety of non-perishable snacks. all the goodies are part of their "Comforts from Home" project. Anyone who wants to donate snack items to be sent to Iraq may drop them off at the American Legion Hall on upper Congress Street. It would have been nice to be able to read the article but it was blank.

I hate to rain on anyone's

I hate to rain on anyone's parade, but I was going to do this a few years ago but after researching found that this is unsafe. Cakes are low acid and can grow botulism unless the recipe is approved by state food authorities. PLEASE check carefully before sending these cakes in a jar to anyone as a gift.
A google search "safety of canning quick breads and cakes" will give much more information.
Again, I don't mean to spoil anyone's good deed, just don't want anyone to get sick!
