BETHEL – Two seminars for people who want to learn more about celiac disease/gluten-intolerance and how to cope with it will take place from 5:30 to 7:30 p.m. Monday, Feb. 5, at Telstar High School, Bethel, and from 10 a.m. to 1 p.m. Saturday, March 4, at Dancing Trees Lodge in Oxford.

During the February session, participants will learn about nutritional alternatives to gluten-based products, such as the variety of rices and other grains and how to cook them. It will also cover other healthy alternatives that have been proven to help people with celiac disease or gluten intolerance to cope with and enjoy their new lifestyle. A review will be included for those who did not attend Session I.

The March session will put the information about nutritional alternatives to wheat and other gluten-containing grains to practice through a cooking session where participants will help prepare and eat a gluten-free meal.

Suzanne Dunham will lead the seminars. She has spent the past 20 years learning about the condition and how to live with it.
