WILTON — The Planning Board on Thursday unanimously approved a use permit for a new restaurant at 392 Route 2.

Rustic Pizza, formerly of Poland, is moving to the site of the former Tony’s restaurant and lounge and plans to open this week.

Owner Jean Saint Louis told the board he lives in Jay and has traveled to Poland for the past three years. The travel is long, especially with the price of gas, he said. He decided it was time to move the business closer so he closed the Poland location and is seeking the necessary permits to open here.

Saint Louis, originally from Haiti, said a health inspection is planned for Tuesday and he intends to open after that.

Along with pizza and subs, the restaurant will serve some meals and breakfasts but no alcohol, he said.  The restaurant hours are 5 a.m. to 9 p.m. Sunday through Thursday, and 5 a.m. to 10 p.m. Fridays and Saturdays, he said.

The restaurant may employ up to 10 people. Four, including Saint Louis, are moving up from the Poland business.

The board approved the use permit pending the restaurant receiving a health department permit after the inspection Tuesday.

In other business, the board also unanimously approved a use permit for Alternative Services to operate a counseling and support office in the Bass Wilson Building on Main Street.

Representing Bass building owner Randy Cousineau, Marty Pike told the board that space is being renovated for Alternative Services to have a conference room and five offices on the third floor.

Alternative Services may have up to 20 employees using the space. It provides services and counseling for people with disabilities, Pike said.
