The former Paris Farmers Union store on Main Street in Paris is slated to become 21 Taps Wood Fired Pizza, according to a plan submitted by Jennifer and David Siegler of Norway. Featuring 21 kinds of craft beer, wood-fired pizza and other entrees, the restaurant is slated to open in March 2018.

PARIS — A plan to convert the former Paris Farmers Union on Main Street to a restaurant featuring 21 Maine-made craft beers and wood-fired pizza has been approved by the Planning Board.

Jennifer and David Siegler of Norway expect to begin construction late this month and open 21 Taps Wood Fired Pizza in March 2018.

The store at 231 Main St. has been vacant for about 10 years.

The Planning Board voted 4-0 to approve the site plan Aug. 22, Chairman Jim Hakala said. Members did not visit the site because they are familiar with the place and did not hold a public hearing “because I feel and the board felt that the public would be a go for it,” he said.

“They have a five-year lease on it and then if the business takes off, they’re looking to purchase the place,” Hakala said.

“It’s going to be quite a place,” Hakala said. “They’re going to have a beer garden outside during the good months of the year. They’re going to have entertainment out there playing … mellow music, mood music, or something like that.”

In documents submitted to planners, the Sieglers wrote, “Lots of fun activities will happen in the beer garden including music, bocce ball or corn hole tournaments.”

They plan 33 parking spaces.

“The name 21 Taps comes from the 21 beer lines we will have on draft,” the company’s description reads. “All 21 tap lines are dedicated to Maine-made craft brews, some of which are not widely distributed and only available in limited batches.”

There will also be domestic bottled beers.

The menu includes wood-fired pizza, prime rib on Friday and Saturday nights, salads and sandwiches.

“Our guests can observe our pizza cook creating masterpieces in the wood-fired oven, which we plan to build just outside of the kitchen with an observation area,” according to the paperwork filed with the board. “Our pizza oven will be able to cook up to six pizzas at one time. The high heat from the wood burning allows us to cook a pizza in less than four minutes.”

The main dining room will seat 100 people, with spots for 80 patrons at 18 tables and 20 customers at the bar. The restaurant will also include eight big-screen TVs streaming New England sports and host an “incredible Super Bowl party each year.”

Besides the main dining room, there will be the Garden Room lounge just inside the main entrance. The space will feature plants and flowers, local art, bistro tables and comfortable seating and serve as a waiting room, if needed.
