DEAR SUN SPOTS: Mechanic Falls will be celebrating its 125th birthday on Saturday, June 2. The Historical Society and the Anglican Church of the Transfiguration, which owns the former First Congregational Church in Mechanic Falls, is planning to showcase wedding photographs of couples who got married at the church.

On Sunday, June 3, at 10 a.m., the Rev. Gary Drinkwater will hold a blessing for all couples who were married at the church. DEAR SUN SPOTS: Thank you for your help in the past. I need it again. I’m looking for a recipe for salmon pie. I can’t find any in my recipe books. I want just a plain pie recipe, not a large amount.

ANSWER: I do love a good salmon pie and this question brings back dear memories of my grandmother. She was a wonderful cook and when she passed away I inherited her rolling pin. Here is her recipe:

Preheat oven to 400 degrees. Line a 9-inch pie plate with pastry.

In a large bowl, combine 2½ to 3 cups cooked mashed potatoes (no milk or butter added), ½ cup finely chopped onion, ¼ cup butter, ½ teaspoon celery seed, ½ teaspoon salt and 1/8 teaspoon pepper.

Drain and flake the contents of a 14.5 ounce can of salmon, crushing in bones. You can also use fresh cooked salmon. Layer the potatoes and salmon in the pastry. Cover with top pastry, seal edges and cut vents for steam to escape. Bake 40-45 minutes or until bubbly and golden brown. Serves 4-6.

Grandma always served this with hot buttered vegetables from her garden and homemade sweet pickles!
