Happy Valentine’s Day to all my readers. The traditional day for showing love always brings back happy thoughts of special times with loved ones. The capacity to love is huge and can fill us up to overflowing. Although the years have passed and my Mother is no longer with me, I can still remember my days spent with her in her kitchen.

She made Valentine’s Day special by baking a heart-shaped cake and sometimes we added candles to the cake and sang Happy Valentine’s Day to us. This recipe is for the busy mom who has little time for baking. Really easy and the kids will love it. Bon Appetit.

Happy Valentine’s Day Cake

Ingredients:
1 box white cake mix
1 small jar maraschino cherries

3/4 cup chopped pecans (optional)
1 (16-ounce container) whipped topping

Prepare: Preheat oven and prepare pans.
1. Drain the cherries, reserving juice, chop cherries.
2. Prepare the cake mix according to directions, adding water to the reserved cherry juice to equal the amount of liquid needed for the cake mix.
3. Fold cherries (and pecans, optional) into the cake mixture.
4. Pour into two round or heart-shaped cake pans, and bake according to directions on the box.
5. When cake has completely cooled, frost with whipped topping, get the candles out and sing a song of love!
