Wheat Berry Salad

I learned how to make this whole grain salad/side dish at cooking school. It is the perfect dish to show the importance of having all the flavor profiles (bitter, sweet, salty, sour) in one dish. Wheat Berries can be hard to find ( look for Bob’s Red Mill) and take a long time to cook. You can easily replace them and keep the whole grain nutrition with hulled barley or farro. Serve warm or at room temperature. Serves 4

INGREDIENTS:
1 1/3 cup wheat berries – or hulled barley or Farro
Water for cooking your grain
1/2 cup dried cranberries
1/2 cup chopped walnuts
1/4 cup sliced spring onion
4 ounces goat cheese
2 tablespoons balsamic vinegar
2 tablespoons olive oil
1/2 teaspoon dijon mustard
1/2 teaspoon honey

DIRECTIONS:
Cook your grain to the package directions. Drain into a large bowl. Add all the other ingredients and serve warm or at room temperature.
