Feta and Roasted Beet Salad

Once I starting roasting fresh beets, I gain a whole new appreciation for this colorful root vegetable.

Ingredients for 4 servings

4 beets

1 tablespoon olive oil

½ teaspoon salt and pepper

4 scallions, chopped

2 teaspoons lemon juice

½ cup crumpled feta cheese

Directions:

1. Peel 4 beets and cut into 1/2-inch pieces. Toss with 1 tablespoon olive oil, 1 teaspoon salt, and pepper to taste on a baking sheet.

2. Roast at 450 degrees F, stirring once or twice, until tender, about 30 minutes. Transfer to a bowl.

3. Toss with 4 chopped scallions and 2 teaspoons lemon juice. Top with crumbled feta.
