DEAR SUN SPOTS: I am downsizing and moving and have had to give up my passion — black-and-white photography. I have sold some items, but still have much and time is running out. I have nearly everything a film-based photographer would need, from camera to developing gear to enlarger for printmaking. The equipment is in fine condition and works like a charm. DEAR SUN SPOTS: I was wondering if maybe some of your Sun Spots readers or you might be able to tell me how to cook chicken so it is not so dry. Every time I cook chicken, it comes out very dry. Any help will be appreciated. — No name, no town
ANSWER: Oh, dear. The internet is chock full of recipes and videos on how to cook tender chicken. A quick look showed simple directions such as coating the chicken with olive oil to more complicated methods such as slicing the chicken thinly using a “butterfly” cut. This involves slicing the breast open lengthwise as if to stuff it. Keep the halves connected. Slice each side again and you have a thin butterfly-shaped piece of chicken that you can cook to perfection, two minutes on each side. A thing I like to do is to slice the breast open and spread a thin layer of mayonnaise or vegan mayo on each side, then bake or grill. The inside will cook more quickly and the meat will be juicy. DEAR SUN SPOTS: We are missing our favorite Asian fusion restaurant, Ann Chun/Jasmine Cafe, which was located in the TJ Maxx Plaza on Center Street. They closed this location recently and the owner said they will continue to operate from their food truck in Turner. Can anyone verify this and provide their current location, telephone, hours, etc.? ANSWER: According to Jasmine Mobile’s Facebook page, the food truck across from the Hannaford supermarket on Route 4 in Turner opened Saturday, May 14, for the season. The hours are Tuesday through Friday from 3 to 8 p.m., and Saturday from noon to 8 p.m. The phone number is 207-713-5952. When I called the number, I got a message saying that number was not accepting messages right now.
