DEAR SUN SPOTS: Minot Historical Society will meet at the Elijah Jones House, 493 Center Minot Hill Road, on July 8 at 5 p.m.
The guest speaker will be Paul Lodge. His presentation will include the history and current activities of the Waterville, Wiscasset, and Farmington Railway in Alna.
Mr. Lodge is one of the founding members of the Great Falls Model Railroad Club of Auburn. He has combined his interest in railroads and photography to create a series of videos for local television stations and You Tube through the Great Falls Model Railroad Club website. DEAR SUN SPOTS: My little great-grandchildren are coming to visit later this summer and I want to make the Jell-O Poke Cake but I can’t find the card with the instructions. Does anyone make this anymore? It’s an easy, light dessert that the little ones love and I think that this year they will be old enough to help. Please share the recipe if you have it. — Sarah, Oxford
ANSWER: Oh yes, I have made that summery dessert from the 1970s many times and so did my mother. You can use any flavor of Jell-O but I always use strawberry. You can top it with Cool Whip but I use homemade whipped cream then decorate it with fresh berries.
Prepare a white cake mix as directed on the box and bake in a 9- by 13-inch pan. Let cool for 15 minutes. Poke holes in the cake with a fork with large tines or a skewer at 1/2-inch intervals.
Prepare Jell-O as directed on the box. Spoon all the liquid Jello over the baked and cooled cake. Allow to chill in the refrigerator for four hours. Frost with whipped cream, Cool Whip, or even buttercream or cream cheese frosting and decorate with fruit or sprinkles.
