AUBURN — You are going to want to check 7 Jam Kitchen out. It’s a new restaurant in an unexpected location: the Auburn Mall.
It’s not that you won’t find restaurants in malls, it’s the menu that may surprise you (in a good way) — like a full English breakfast.
Owner and chef Kevin Guay is originally from Hollis and was most recently a chef at Fish Bones Grill. He has decided to strike out on his own. His career is long and varied, with eight years on the road as a catering chef for musical acts among his stops along the way.
“Everything I’m doing here is just something that I did somewhere that I really liked,” Guay explained, noting that most of his current menu is made from scratch and will constantly evolve.

“The menu will change constantly,” Guay said, “especially during the summertime as I start getting ready with the farmers markets.”
There are some limitations with the restaurant’s kitchen — the former Papa Gino’s across from Miller Fitness. But Guay says that won’t stop him; he’ll just find a workaround.
The panini bread recipe comes from another restaurant he worked at. He bakes it in the pizza oven and uses it for sandwiches — like the basil pesto, marinated chicken, roasted red pepper, and arugula panini, one of five on the menu.
7 Jam Kitchen is a bright, renovated spot that can seat up to 70. The restaurant has a full liquor license, but for now will offer Bloody Marys, mimosas and beer, with plans to add wine and some signature cocktails down the road.
Guay is starting out slowly as he builds his routine, grows a staff, and a following. “The only thing that I knew that we were going to do, is we were going to start with breakfast,” Guay said.
Breakfast is offered Saturdays and Sundays from 9 a.m. to noon and lunch is served Friday from 10:30 a.m. to 4 p.m. and Saturday and Sunday from noon to 4 p.m. Days and times will expand in the coming weeks.
The breakfast menu can be as simple as avocado toast or a yogurt, berry and granola bowl, or you can indulge with full plates, including frittatas with seasoned potatoes and focaccia, and your choice of three eggs Benedict dishes served on a crumpet with seasoned potatoes and homemade hollandaise. There’s a 30-hour pork belly served with grits that is melt-in-your-mouth good.
The lunch menu offers a glimpse of what the dinner menu will eventually be — there’s a Creole influence with gumbo, crawfish étouffée, red beans and rice, and crawfish bisque. There are paninis and specialty pizzas on the menu as well.
7 Jam Kitchen is open Easter weekend, but reservations are highly recommended with limited staffing and considering the restaurant’s newly opened status. Use [email protected].
