DEAR SUN SPOTS: You have helped me over the years with so many things and I’m hoping you can help me again. 

My grandmother used to make a delicious rhubarb pie with eggs in it. It isn’t a custard pie but had the eggs in it to hold it together. I cannot find the recipe and am craving this pie! My rhubarb patch is really going strong this year. — Mandy, no town

ANSWER: I’m glad you brought this up because now I’m inspired to make this pie too. My daughter has gifted me with a bunch of rhubarb and I will put it to good use. Everyone in my family loves rhubarb, Here you go! 

Preheat oven to 450 degrees. In a large bowl, stir together 2 beaten eggs and two tablespoons milk. Stir in 1 1/2 cups sugar, 2 tablespoons flour, 1/2 teaspoon salt, 1/2 teaspoon cinnamon, and 1/4 teaspoon nutmeg. Fold in 3 cups chopped rhubarb. 

Put filling into prepared pie crust, dot with butter, and place top crust, sealing edges and cutting vents for steam to escape. Bake for 15 minutes then reset oven to 350 degrees and bake for 45 minutes more, until filling is soft and bubbling and the crust is golden. This pie is best served at room temperature so it has time to gel and settle. Leftovers should be refrigerated. Makes 8 servings.

We accept Christmas items all year for our sale that takes place in November. We have had such an overwhelming response from Sun Spots readers in the past and we are very thankful to all of you who have donated items.
