AUBURN — Warmer weather brings out the food trucks in Maine and this year a unique offering comes from Maine-ly Bison.

Hunter Soucy and his girlfriend, Mariah Carroll, have only been open three weekends and have sold out a couple of times. “It’s been great,” Soucy said.

The focus is bison — a leaner, sweeter-tasting meat that has less fat, fewer calories, and more protein than beef. The bison comes from the family farm at the Homestead Lodge in Oxbow in northern Maine, where the family raises a small herd of grass-fed bison.

Their hand-cut fries are made from potatoes grown, where else, but Aroostook County, and the bun comes with a trademark bison brand burned in.

They serve the same bison burgers that are served at Homestead Lodge, which will be familiar to snowmobilers who travel north.

The menu is small and simple, offering bison burgers, red snappers (topped with bison chili and cheddar cheese as an option), and fries. Desserts are the specialty of Soucy’s partner: parfait cups with fresh fruit.

“I wanted to get really good with my menu before moving on,” Soucy told The Buzz last week.

Maine-ly Bison can be found at the corner of Minot Avenue and Hotel Road on Friday-Sunday, 11 a.m.-7 p.m., closing at 6 p.m. on Sunday, or when they sell out.

Don’t put a visit off too long though: The Maine-ly Bison food truck will only be at this location on the weekends through the end of July, when they will head north to Presque Isle for the remainder of the summer.

Maine-ly Bison will also be part of the Lewiston/Auburn Liberty Festival July 4 from 1-9 p.m. on the Auburn side at Great Falls Plaza.
