NORWAY – Edy-Jane’s tacos are so stuffed she gives out a fork with every order.

There’s plenty of either shredded beef or chicken in them, a load of vegetables and a good dollop of sour cream.

The tacos, wraps and Italians are the newest food items on the menu at Edy-Jane’s Dee-Lights, which has been primarily known to residents as a place for ice cream.

Owner Edythe Jane Estes is hoping the new items will help maintain revenue through the winter.

Estes started her business in October when she rented the space previously occupied by Oxford Hills Soft Serve at 29 Main St.

She unveiled her style of tacos on Halloween night.

“It was a total flop,” she said. “I knew it was going to be tough. People are used to getting ice cream here.”

She offered wraps along with the tacos and a homemade soup. In January she added Italian sandwiches. She said she would add lobster rolls in the spring.

Having spent 30 years in financial management and bookkeeping, Estes had no professional experience in operating a restaurant.

However, her tacos were a big favorite with her three children and their friends.

“I made tacos for 21 at my home last spring, before the kids left for the prom,” Estes said. “Kids love tacos and with all the vegetables and cheese they’re healthy.”

Estes said after spending 30 years in an office setting, she was ready for a change. She said it was a good time to try her own business because if it didn’t work, at 49 years of age she felt she was still employable.

She could have rented the space last spring, but said she chickened out.

“Then the opportunity came up in September, so I gave up my job and paycheck and here I am,” Estes said. “It’s scary, but I’m confident about the ice cream business. If nothing else I could find another job in the winter and work here in the summer.”

She has been offering hard and soft ice cream throughout the winter. She said she has 35 extracts, which when added to the soft serve create different flavors.

She also makes tri-flavored parfaits, homemade ice cream cakes and ice cream pies.

Her immediate family has been and will be part of the operation. Gregory, her husband, built the kitchen so she could prepare food.

Her children, Jillian, 20, Karley, 18, and Josey, 14, are slated for some of the daily work there, most likely during the summer and weekends.

Edy-Jane’s hours of operation are 11 a.m. to 6 p.m. Tuesday through Thursday; 11 a.m. to 7 p.m. Friday and Saturday.

Beginning March 8 the store will be open on Sundays from noon to 7 p.m.
