Dear Sun Spots: I enjoy your column so much. I look forward to it every day. I’m looking for an easy seven-layer casserole. I used to make it years ago but I can’t seem to find it. Seven-Layer Casserole One-Dish Recipe. Ingredients: 1 cup uncooked rice, washed and drained; 1 cup whole kernel corn, drained; dash salt and pepper; 1 can (8 ounces) tomato sauce and ½ cup water; ½ cup chopped onion; ½ cup chopped green bell pepper; ¾ to 1 pound extra-lean ground beef, uncooked and broken up; dash salt and pepper; 1 can (14.5 ounces) diced tomatoes, undrained; 4 strips bacon, cut in half; shredded cheese, if desired, for topping.
Method: Place ingredients in a buttered 1½ quart casserole in order given. Cover and bake at 350° for 1 hour. Uncover and cook 30 minutes longer, until bacon is crisp. If desired, top with shredded cheese the last 10 to 15 minutes. This seven-layer casserole serves 4.
Seven Seas Casserole Recipe. Ingredients: 1 can cream of mushroom soup; 1¼ cups water; ½ pound lobster meat; 1 small box frozen peas, thawed; 1 1/3 cups Minute rice; ¼ teaspoon salt, cheese, paprika. Method: In a saucepan, mix the soup, water and salt, and bring to a boil over medium heat, stirring occasionally. Pour about half the mixture into a greased casserole dish. Then, in layers: Add the rice, lobster and peas. Add the remaining soup. Top with cheese of your choice. Sprinkle with paprika. Cover and bake at 350 degrees for about 20 minutes. Serves 6 people.
Seven-Layer Tortilla Pie. Ingredients: 2 (15 ounce) cans pinto beans, drained and rinsed; 1 cup salsa, divided; 2 cloves garlic, minced; 2 tablespoons chopped fresh cilantro; 1 (15 ounce) can black beans, rinsed and drained; ½ cup chopped tomatoes; 7 (8 inch) flour tortillas; 2 cups shredded reduced-fat Cheddar cheese; 1 cup salsa; ½ cup sour cream.
Method: Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius). In a large bowl, mash pinto beans. Stir in ¾ cup salsa and garlic. In a separate bowl, mix together ¼ cup salsa, the cilantro, black beans and tomatoes. Place 1 tortilla in a pie plate or tart dish.
Spread ¾ cup pinto bean mixture over tortilla to within ½ inch of edge. Top with ¼ cup cheese, and cover with another tortilla. Spread with 2/3 cup black bean mixture, and top with ¼ cup cheese. Repeat layering twice. Cover with remaining tortilla, and spread with remaining pinto bean mixture and cheese. Cover with foil, and bake in preheated oven for about 40 minutes. Cut into wedges, and serve with salsa and sour cream.
Seven Layer Casserole Ingredients : 6 potatoes; sliced; 1 large onion, sliced; 2 carrots, sliced; 1 green pepper, sliced; 1 zucchini, sliced; 1 cup corn (fresh or frozen); 1 cup green peas (fresh or frozen). Optional Vegetables: 1 cup mushrooms, 1 cup broccoli, 1 cup green beans. Sauce: 3 cups tomato sauce, ¼ cup low-sodium tamari sauce, 1 teaspoon ground thyme, 1 teaspoon dry mustard, 1 teaspoon basil, 2 teaspoons chili powder blend, ½ teaspoon cinnamon, 1/8 teaspoon oregano, 1/8 teaspoon sage, 2 tablespoons parsley flakes.
Method: Preparation time 30 mins. Cooking time 1½ hours. Layer vegetables in large casserole in order given. Use optional vegetables as desired. Mix ingredients of sauce together. Pour over vegetables. Bake, covered, in a 350 degree oven for about 1½ hours. Helpful hints: Other vegetables may be used, according to your preference. This dish is easy to prepare ahead and hold in the oven for a company dinner. Serve with whole grains or bread and a green salad.
