Dear Sun Spots: I have been getting all kinds of junk mail telling me I could make extra money by mailing and stuffing envelopes and postcards for some companies from California, Florida, Colorado and more. I would love to work a couple of hours at home, after my full time job, in something easy to do so but it has to be a company or business nearby in Lewiston, Auburn or even Portland. Dear Sun Spots: Here is a delicious Sweet Potato Pie recipe as requested in Thursday’s Sun Spots:
Sweet potato pie ingredients: 2 cups mashed sweet potatoes, ½ cup margarine, ½ teaspoon pumpkin pie spice, 1 cup sugar, 2 eggs, slightly beaten, ¼ cup milk, 1 teaspoon vanilla. Method: Boil sweet potatoes until tender, put in large bowl and mash. Add margarine while potatoes are hot, mix at low speed. Add pumpkin pie spice, sugar, eggs, milk and vanilla. Mix well. Pour into un-baked pie shell. Bake at 450 degrees for 5 minutes. Lower heat, and bake at 350 degrees for 50 -55 minutes, until filling sets and begins to brown. Cool and garnish with whipped cream.
