Mrs. C.M. Lunt, Davis street’s Steamed Apple Pudding: Pare, quarter and core one pint of apples and put in a pudding dish. Make a batter with one-half pint sour milk, one-half teaspoon soda, one-half tablespoon butter, flour enough to make quite stiff. Pour over the apples and steam an hour.

Cream of carrot soup has an excellent flavor and the color is quite pleasing. Cook enough small young carrots in boiling salted water to make one and one-half cups when pressed through a ricer or mashed very fine. Add two cups of water in which they were cooked. Make a white sauce with one and one-half cups of milk, two level tablespoons each of butter and flour, and cook eight minutes. Add the carrot pulp and the water, and when hot boil one minute, then add one-half cup of hot cream and serve with croutons.

50 Years Ago, 1956

The preliminary line of Maine’s 315-mile section of the Interstate Highway System has been approved by the federal Bureau of Public Roads, the State Highway Commission said. The highway, to be built over a 3-year period, will be a four-lane divided from Kittery to Bangor and a two-lane from there to Houlton, and will be designed for speeds of 60 miles an hour or more. Access will be allowed only at interchanges.

25 Years Ago, 1981

Once a vibrant economic corner of Lewiston, outer Main Street’s commercial viability has fallen victim to both local marketing trends and, ironically, public improvements. Within the last three years, three major businesses have terminated their operations in the area, either for a move to greener pastures or to consolidate. A fourth large business went under but was revived a few months later. In December, King’s department store closed up shop in Lewiston, leaving 62 people unemployed. Fordland closed its Lewiston showroom in 1979 in favor of its sibling operation, Auburn Motor Sales Inc. on Center Street in Auburn. Last year, Louis Chevrolet vacated its Main Street dealership and also moved to Center Street.
