Dear Sun Spots: Please help me!

I am looking for a cornbread recipe from Big Bubba’s BBQ at the Mohegan Sun Casino. They have the absolute best cornbread I have ever tasted! Any help would be appreciated. – Liz Trebilcock, No Town.

A great many thanks to executive chef Francis Collymore, who was more than glad to share this with Sun Spots and column readers.

While he has not included exact proportions, Sun Spots would recommend you use your usual recipe proportions for liquids, sugar, flour, cornmeal and sugar as well as leavening agents and method. You can add scallions, cilantro and jalapeno as you prefer:

Cornbread Ingredients: Cornmeal, flour, buttermilk, whole milk, butter, sugar, baking soda, baking powder, scallions, cilantro, jalapeno peppers.

Dear Sun Spots: I read your column everyday and am always amazed at what people request. So here’s another one. I’ve watched Dr. Oz on Oprah.

On one of the episodes, he spoke of the benefits of using a Neti Pot with warm saline solution as a form of nasal irrigation. I’ve looked here in Lewiston and cannot find one. Could you please help? – Terry, No Town

Answer:
According to Oprah.com, Dr. Oz recommends mixing warm water with a quarter teaspoon of non-iodized salt. Regular water can be irritating.

• Bedard Pharmacy at 61 College St. in Lewiston carries Neti Pots and salt. They’d be happy to assist you with your needs and may be reached at 786-0138.

• Axis Natural Foods at 250 Center St., Auburn, also sells them for $16.95; salt may be purchased by the pound. Cleaner is also sold separately. Axis is open from 9 a.m. to 8 p.m. Monday through Friday and 9 a.m. to 6 p.m. Saturday.

• Red Hill Natural Foods, 228 Waldo St., Rumford, 369-9141 is also an option for those in the River Valley region. They are open from 9 a.m. to 6 p.m. Monday through Saturday and until 7 p.m. Thursday. The Neti Pot costs $16.59, and store owner Barbara says you can use pure sea salt. She says the store does also carry Neti salt but it’s more expensive than the pure, sea salt.

• Fare Share Co-Op, 443 Main St., Norway, 743-9044, www.faresharecoop.org. It is open from 9 a.m. to 6 p.m. Monday, Tuesday, Wednesday and Saturday; and until 7 p.m. Thursday and Friday.
