Joy of eating is theme of restaurant program

BETHEL – “Reconnect with the Joy of Eating” was the theme of the Sudbury Inn’s “Healthy Eating on a Budget” program attended recently by 30 diners.

Scott Davis, owner, and Peter Bodwell, chef, said savoring every bit of food by chewing it slowly helps to connect with the joy of eating. They listed a variety of healthy eating tips and said, “Healthy eating is an opportunity to expand your range of choices by trying foods, especially vegetables, whole grains, or fruits that you don’t normally eat.”

With that in mind, Bodwell prepared a menu entrée of wild Pacific salmon cooked in a wrapping of parchment paper over julienne vegetables and served with couscous. It was preceded by chilled cucumber soup with radish confetti.

Bodwell completed the menu with a dessert of Bavarian cream, in portion control size. As one diner commented, “It was high-quality food served in a very pleasing way with good food aroma and color.” All diners received copies of the recipes and healthy tips.

The final Healthy Eating on a Budget evening will take place on Thursday, April 30, at S.S. Milton Restaurant.

Eight Bethel restaurants participated in the program, planned by the To Your Health Committee of Western Mountains Senior College in collaboration with Bethel Family Health Center, SAD 44 Community Education and Wayne DuPlessis, counselor.

Rosabelle Tifft and Judy Whitman, co-chairwomen of the project, said since the restaurants had limited seating, the committee plans to have all recipes and health tips printed in a publication with the help of the community education department of SAD 44.
