LEWISTON — The Culinary Arts Certificate course will be offered through Lewiston Adult Education this summer. The program will offer area residents the opportunity to gain practical experience and learn about the many aspects of restaurant work. Participants will complete the program fully prepared for entry-level work in a restaurant or catering business.
The program provides hands-on training in broil, breakfast, meat, fry, sauté, seafood and starch cookery, as well as experience in baking and pastry-making. Participants in the program are also given training in the business aspects of the food service industry. They will learn how to write menus, manage food costs, order materials and complete production.
Participants in the course will operate the Green Ladle, a catering business housed in the LRTC Green Ladle Culinary Arts Building. Students will have the opportunity to work catering functions throughout the semester to practice and perfect their new skills and experience all aspects of the restaurant business.
The Culinary Arts Certificate Program will meet from 9 a.m. to 1 p.m. Tuesdays, Wednesdays and Thursdays from July 7 through August 20. The fee is $350, plus a $150 lab fee.
