Dear Sun Spots: I know you have all the answers, so I’m turning
to you with a problem I am having lately. I love to make potato salad,
regular and with red-skinned potatoes. What am I doing wrong? Once
cooked and cut, the potatoes turn gray. The salad is good, but it
doesn’t look so appetizing.

Should I be doing something extra to prevent this from happening? Help, please. At a loss! — Faithful Reader, Lewiston.

Answer:
The National Potato Council notes that potatoes may turn a darker or
black color after cooking if the potatoes are old or have been in a
cold environment, such
as from exposure to frost or being in a refrigerator. You can prevent
this problem by storing them in a warmer environment or when cooking
you can add a little lemon juice or vinegar to the water you boil them
in.  

The council says that potatoes should be stored in a
cool, dry environment with good ventilation. Paper bags, cardboard
boxes and pantries are good places to store them. An ideal temperature
for storage would be between 45 and 55 degrees Fahrenheit. Avoid
storing them in plastic bags or in refrigerators and make sure the
environment is not too warm. 

Dear Sun Spots: The Lithuanian Heritage Club of Rumford will be having an old-fashioned Lithuanian-style picnic on Saturday, Sept. 12, at Mountain View Campground (Welch’s Field) in Dixfield. The picnic will begin at 11 a.m., and participants should bring their own lawn chairs, food and refreshments. A limited amount (first come, first served) of authentic Lithuanian food (kielbasa, kugelis, etc.) will be available for sale. Also available for sale will be T-shirts commemorating the event. Anyone interested in purchasing a shirt is asked to call Olga Richardson at 562-4482. The picnic is open to the entire community, those of Lithuanian descent or any others just interested in learning more about Lithuanian history and culture.

The Rumford area Lithuanian Heritage Club is a newly formed club looking to preserve family, social and cultural traditions of our ancestors. Those attending the picnic are asked to bring any Lithuanian artifacts or items of interest that they may have. It is the intent of the Lithuanian Heritage Club to make this picnic an annual event. There will be no admission cost to this event, but donations will be accepted to help fund all future events.
