NEW GLOUCESTER — Pineland Farms Creamery will launch a two-day cheese-making workshop in October as part of a new program of classes it will offer in cooking and agriculture.

The course, taught by Pineland Farms’ head cheese-maker, Mark Whitney, will begin on Saturday, Oct. 10. The class will begin with the history and fundamentals of cheese-making; then students will be instructed on making their own batches of butter, ricotta cheese, farmer’s cheese and mozzarella cheese.

Following the workshop, the class will head to one of Pineland Farms’ guesthouses for a wine and cheese tasting with seasonal hors d’oeuvres and Pineland Farms’ cheese.

Day two of the course will take students into the creamery to work alongside cheese-making experts and learn the art and science of making cheese in larger batches.

Tuition for the course is $275, and students are provided all materials and supplies needed to make and bring home butter, ricotta and farmer’s cheese.
