SOUTH PARIS — A two-part seminar on living gluten-free will be offered through SAD 17 Adult Education, at the Oxford Hills Comprehensive High School, culinary arts kitchen, room B105.

Session one will meet from 6 to 8 p.m. Thursday, March 25. It will be a seminar designed for people who are newly diagnosed and learning to live without gluten or think they may be gluten intolerant or have celiac disease. The class may also be helpful to people with other autoimmune disease or those who have conditions such as autism that fare better on a gluten-free diet, as well as professionals or care givers of people who are gluten intolerant.

Session two will be from 6 to 8 p.m. Thursday, April 1. It will be a cooking class where participants will prepare foods using alternative grains and flours, including converting old favorites. Handouts and recipes will be included.

The seminar will be presented by Suzanne Dunham, who has given gluten-free presentations and cooking classes since 2005 in such venues as the Goose-Eye Institute in Bethel; the Common Ground Country Fair, Country Kitchen; SAD 17; St. Mary’s Community Education, Lewiston; Maine General Health/Rising Tide, Damariscotta; Rangeley Health Center; and the Natural Living Center, Bangor.

Dunham has spent years researching and learning to live with celiac disease. She is an herbalist focusing on nutrition, specifically gluten intolerance.

The program will include handouts and recipes and participants will be able to sample the foods that are prepared. Fee for the seminar is $10 each, or $18 for both.
