DEAR SUN SPOTS: For the lady who wanted a sugarless pumpkin pie, here is a recipe passed on to me by my father (who was a chef back in the 1920s). Note that it is eggless, butterless and sugarless.

2 cups pumpkin

2 cups canned milk (hot)

2 common crackers (rolled fine)

3 tablespoons boiled seedless raisins

1/2 cup molasses

1/2 teaspoon ginger

1/4 teaspoon nutmeg

1 teaspoon cinnamon

1 teaspoon salt

Stir all ingredients until well blended and pour into prepared pie crust. Bake 10 minutes in a hot oven (Sun Spots thinks this would be about 425 degrees), then reduce heat to 350 degrees and bake for 30 more minutes, or until knife blade comes out clean.

DEAR SUN SPOTS: Regarding C.M. of Greene’s Nov. 23 request for pumpkin pie without refined sugar, USM’s Franco-American Collection has a French recipe for “Old-Fashioned Pumpkin Pie” from 1928, made without refined sugar (although it has 4 tablespoons of brown sugar).

I would be happy to provide it (and, if necessary, a translation) to anyone who wants to visit the collection. We have plenty of other old-fashioned recipes available as well.
