LEWISTON — Uthai “Tony” Nakhen has cooked in India. He’s cooked at a 5-star hotel in Thailand and for two seasons on a Carnival cruise ship. He ran his own restaurant in Albany, N.Y.

And now he wants to cook for Lewiston.

This summer, Thailand-native Nakhen opened Boa Thai Sushi, a Sabattus Street restaurant with a sushi bar, seating for lunch and dinner, and take out. Open for just six weeks, the restaurant already has a dedicated following, with new patrons brought in by friends and family.

“It’s good. Very good. My customers are very happy,” Nakhen said. “They try to support us.”

The restaurant’s menu features traditional Thai dishes, such as pad Thai. It also offers an array of sushi, including both raw and cooked seafood, as well as a restaurant special made with cooked chicken.

“This is for people who don’t like fish,” Nakhen said.

All of Boa’s dishes and sushi sauces are made from Nakhen’s own recipes, honed over the years as he worked as a cook, restaurateur and owner of the former Sunrise Asian Market on Main Street. The staff includes experienced cooks and waitstaff from across the country.

Boa is open for lunch and dinner Tuesday through Sunday. It is located at 703 Sabattus St.
