DEAR SUN SPOTS: I am writing to you for my sister-in-law. She is trying to find a recipe for raisin pie. We would sure be glad if some readers could help us. — J. st. A., Auburn

ANSWER: Sun Spots has noted previously that there are dozens, if not hundreds, of recipes for anything you can think of online. However, copyright issues limit when she can reproduce them. But with this recipe, she got lucky.

Sun-Maid, the raisin company, has the following recipe online. Sun Spots is pretty sure that company officials will be thrilled to have Sun-Maid mentioned in the column and wouldn’t mind her including the recipe.

Ingredients

2 cups Sun-Maid natural raisins

2 cups water

½ cup packed brown sugar

2 tablespoons cornstarch

½ teaspoon cinnamon

¼ teaspoon salt

1 tablespoon vinegar

1 tablespoon butter or margarine

1 double unbaked pie crust

Directions

Combine raisins and water and boil for 5 minutes.

Blend sugar, cornstarch, cinnamon and salt.

Add to raisin liquid and cook, stirring until clear. Remove from heat.

Stir in vinegar and butter/margarine. Cool slightly.

Turn into pastry-lined pan. Cover with top pastry or lattice strips.

Bake at 425 degrees Fahrenheit about 30 minutes or until crust is golden brown.

Makes 1 pie (8 servings).

The other recipes online were very similar. One included vanilla, while one used white instead of brown sugar.

Two other recipes available from Sun-Maid are sour cream raisin pie and apple raisin cobbler pie.

Perhaps readers will have a recipe they’d like to share as well.
