LEWISTON — Lewiston Adult Education will offer the Culinary Arts Certificate Program this July and August. Designed to fully prepare participants for entry-level work in the food service industry, this summer program provides over 84 hours of instruction, plus opportunities for students to practice their new skills through work in various professional catering functions.
Graduates have gone on to get culinary jobs in local restaurants, franchises, hospitals, nursing homes and catering businesses. Some have advanced to head chef and management positions, and others have become proprietors of their own catering companies.
The program teaches students how to create delicious soups, sauces, desserts and pastries, and includes hands-on learning opportunities in broil, breakfast, meat, fry, saute, seafood and starch cookery.
In addition to cooking and baking, the program also emphasizes business aspects of restaurant work. Participants learn about the 10 positions of operating a restaurant, menu writing, managing food costs, completing production, ordering procedures and grande manager.
The summer Culinary Arts Certificate Program will meet Tuesdays, Wednesdays and Thursdays from 9 a.m. to 1 p.m., from July 8 through Aug. 21. The fee is $300, plus a $285 lab fee. However, program participants will have opportunities to work as compensated caterers as part of their learning throughout the summer.
