LEWISTON — The Culinary Arts Certificate program will be offered this summer at Lewiston Adult Education on Tuesdays and Thursdays from 5:00 p.m. to 8:30 p.m. from June 9 through September 3. The program will meet at the Green Ladle, and the course is designed to fully prepare participants for entry-level work in the food service industry. The program provides more than 80 hours of instruction, and opportunities for students to practice their new skills through working professional catering functions.

The Culinary Arts Certificate program will teach students how to create delicious soups, sauces, desserts and pastries from scratch, and will include hands-on learning opportunities in broil, breakfast, meat, fry, sauté, seafood and starch cookery.

In addition to cooking and baking, the Culinary Arts Certificate program will also emphasize business aspects of restaurant work. Participants in the program will learn about the ten positions of operating a restaurant, menu writing, managing food costs, completing production, ordering procedures and grande manager.

The fee for the program is $365, plus a $305 lab fee. However, program participants will have opportunities to work as compensated caterers as part of their learning throughout the summer.
