I’ve been watching this show for some time and I would appreciate knowing their names. DEAR SUN SPOTS: Some time ago I wrote to you asking why my jars of jam were unsealing after sealing. I think I may have found out why. I bought new jars and had to pry the lids off. I used these lids again, then some unsealed. The next new jars I bought I threw away the old lids and I had to pry off the new lids. So far no jars have unsealed. I think the lids I pried off had broken seals, like used lids. Thank you for all the answers you provide. — No Name, No Town.

ANSWER: Sun Spots has done canning in the past and knows that lids should be replaced after each use. Ball and Kerr brand canning jars and lids share this information: “What causes lids to come unsealed or not seal at all? Check the following points to determine if one of them is the cause:

Insufficient or incorrect processing;

Over-tightening the band before processing or re-adjustment of the band after processing;

Incorrect headspace;

Reusing lids;

Using commercial jars;

Not preparing lids for use according to manufacturer’s instructions;

Not removing air bubbles from the jar or cleaning the rim of the jar before applying the lid.

The National Center for Home Food Preservation states: “Lids should not be used a second time since the sealing compound becomes indented by the first use, preventing another airtight seal. Screw bands may be reused unless they are badly rusted or the top edge is pried up which would prevent a proper seal.”
