WEST PARIS — The Board of Selectmen on Wednesday approved a special amusement permit for Jason Koskela, owner of Rustic Grill and Tavern, to host occasional special events at his restaurant at 64 Bethel Road.

Koskela opened the restaurant on Sept. 12, bringing new life to a familiar restaurant location. Formerly The All-American Tavern, the Rustic Grill and Tavern features fresh twists on old favorites, such as pot pie, which Koskela said is a favorite of restaurant patrons. He said his menu is adapting to meet evolving interests.

“We’re changing it to keep it fresh,” he said. “We’re heading in more of an upscale direction.”

Koskela said he plans to host events occasionally, and not too late into the evening.

“I think it’s a good thing,” Selectman Peter Collette said.

The special amusement permit will run concurrently with the restaurant’s liquor license, and Koskela will need to reapply for the amusement permit.

In other matters, the Town Office had R-38 insulation installed Friday to help with heating costs. Windows have also been ordered for the Town Office building. As soon as they arrive, Town Manager John White said the town will install them on one side of the building.
