Festive Brussel Sprout Slaw

Serves 8
Brussel sprouts recipes have come a long way since I was a little kid and a very picky eater! No more bland and mushy Brussel Sprouts. This slaw is a perfect addition to a festive table when you need a little something crisp and bright.

Ingredients:

1/2 cup olive oil
1/4 cup Champagne, Sherry, or Apple cider vinegar
2 teaspoons Dijon mustard
2 teaspoons kosher salt
1/2 teaspoon black pepper
1 1/2 pounds Brussels sprouts, thinly shaved
1 cup toasted pecans, chopped
1  pear, thinly sliced (about 1 cup)
1/4 cup pomegranate arils (the ruby red seeds)

Step 1. Whisk together oil, vinegar, mustard, salt, and pepper in a small bowl. Place Brussels
sprouts in a large bowl. Add 1/2 cup of the dressing, and toss to combine. Let stand at
room temperature until softened, 30 minutes to 1 hour.

Step 2. Add pecans, pear slices, and pomegranate arils to Brussels sprouts, and toss to
combine. Drizzle with remaining dressing just before serving.
