Pear, Pomegranate and Avocado Kale Salad

Adding lots of fruit makes for a festive and fun healthy salad.
Serves 4
6 cups kale, washed and torn
2 tablespoons apple cider vinegar
6 tablespoons olive oil
Salt and pepper to taste
1 teaspoon honey
1 pomegranate, seeded
1 pear, sliced
1 avocado, sliced

1. Mix the vinegar, oil, honey, salt, and pepper together in a small bowl. Place the kale in a large bowl and drizzle with the salad dressing. Rub the dressing into the kale leaves with clean hands.
2. Add the pomegranate seeds, pear slices, and avocado slices. Gently toss together well and serve.
