Here is a healthy way to start Valentine’s Day or a delightful snack to LOVE! Strawberry Energy Balls!

This recipe works best if you have a food processor. Please make sure an adult is close by to help work the food processor.

Strawberry Energy Balls
Makes 20 balls

Ingredients:
1 cup or 12 strawberries, can be frozen
1.5 cups oats
1 cup sunflower seeds, unsalted
½ cup shredded coconut, plus 2 Tablespoons for coating the energy balls
1 Tablespoon maple syrup
1 tsp vanilla extract
2 Tbsp desiccated coconut for coating the strawberry energy balls.

Directions:
Prepare your strawberries, i.e. wash and remove the tops.

Place the strawberries and all the other ingredients in a food processor. Whiz, whizz, whizz, it will take some time, be patient.

Eventually, it becomes a fine paste and will come together as a rollable dough.

At this point, you may need to refrigerate the mix for a short time (30 mins) this will just make it easier to form the strawberry balls.   If you have used frozen berries, you can probably skip this step.

Use a damp tablespoon to scoop portions. This stops the mix from sticking to the spoon.

Using your hands, roll the strawberry ball dough into smooth balls. Damp hands will stop the mix from sticking to you.

Roll the balls in shredded coconut. I do this by putting a few tablespoons of coconut in a small bowl, and rolling each ball in the coconut to cover it.

Refrigerate for 2 hrs or overnight before serving.
