Mediterranean Tuna

This Mediterranean-style tuna salad is great in a sandwich or served on top of a bed of spring lettuce.

Serves 4 on pita bread as sandwiches

Ingredients:

2 tbsp. fresh lemon juice

2 tbsp. olive oil

Kosher salt and pepper

3 can solid white tuna

1/2 small red onion

1/2 c. grape tomatoes

1/4 c. pitted Kalamata olives

1/4 c. flat-leaf parsley

4 small or 2 large pitas

Directions:

1. In a large bowl, whisk together the lemon juice, olive oil, and 1/4 tsp each salt and pepper.

2. Add the tuna, onion, tomatoes, olives, and parsley and gently toss to combine.

3. Open the pita halves and fill with the tuna salad.
