DEAR SUN SPOTS: In response to your request for more rhubarb recipes, here is a delicious one! My aunt had a prolific rhubarb patch which was in its full glory at my birthday every year. It was tradition for her to invite me over and serve me this cake. She did it right up until she passed away at the age of 83. She would love that I’m sharing this recipe with Sun Spotters! It doesn’t have eggs so it’s a good dessert recipe for those with allergies. You can substitute cranberries for the rhubarb in the fall/winter.

Rhubarb Cake with Sauce: Preheat oven to 350 degrees. In a large bowl, whisk together 4 cups flour, 2 cups sugar, 4 teaspoons baking powder, and 1/2 teaspoon salt. Stir in 2 cups milk and 6 tablespoons melted butter. Add 4 cups diced rhubarb. Stir just until combined.

Pour batter into a buttered 9- by 13-inch baking pan. Bake for 45 minutes or until a toothpick inserted in the middle comes out clean. Remove from oven and cool.

To make the butter sauce, combine the 1/2 cup butter, 1 cup sugar, and 3/4 cup cream in a heavy saucepan. Bring to a boil over medium heat and boil for 1 minute, stirring frequently. Remove from heat and let cool slightly.

To serve, cut pieces of cake and serve with a generous amount of warm butter sauce. The sauce can be gently reheated on the stove or in the microwave if necessary. Pour over cut pieces of cake before serving. — Jess, no town
