Roasted Red Pepper Frittata
Servings: 4
Like a quiche but a whole lot easier – feel free to add any cooked proteins or sautéed vegetables you like.
Ingredients:
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, chopped
6 large eggs
1 cup low-fat milk
1/2 cup parmigiano reggiano, grated
1 large roasted red pepper, diced
1/4 teaspoon salt
1/4 teaspoon pepper
1 handful parsley, chopped
Directions:
1. Heat the oil in an oven-proof pan over medium heat.
2. Add the peppers and onion and cook until it has just softened, about 5-7 minutes.
4. Add the garlic and saute until fragrant, about a minute.
5. Mix the eggs, Parmigiano Reggiano, roasted red pepper, onions, garlic, salt, and pepper in a large bowl.
6. Pour the egg mixture into the pan and cook until the eggs are almost set, about 10-15 minutes.
7. Transfer the pan into a preheated 400F oven and let the eggs finish cooking, about 10 minutes.
