AUBURN — The windows are fogged up and the oven is on all day at Katie’s Confections — a new-to-the-area, one-woman bakery.

Katie Ray is in her first full week of business at 894 Minot Ave., in the former Mac’s Downeast Seafood space.

Not to worry, it’s warm, bright, clean and smells like a bakery — and not like fish. It’s the first question she gets when people walk through the doors: “Did you get the smell out?”

What does hit you is the wraparound display cases chock full of goodies including Bismarcks, eclairs, cannolis, fruit and meat pies on the left, and to the right whoopie pies, brownies, fruit scones, oversized muffins and baked doughnuts, with a soft airy texture different from deep fried doughnuts.

It’s not her first rodeo. Ray spent 20-plus years as a waitress and the past seven years owning AllyKats Farmland Market in West Gardiner. Friends and family live in Minot and she graduated from Edward Little High School in Auburn. So, she decided to set up shop closer to home.

The self-taught baker calls baking her passion. “Even though I dealt with food all day long, that was my release — to bake it and give it away,” Ray said Thursday.

Don’t expect her to give it away now, but the prices are still very reasonable, with scones at $3.75, doughnuts at $2.25 and oversized blueberry muffins at $4 each.

Lunch is a big part of her concept too, with a steam table cradling hot soups like broccoli and cheese, corn chowder, and beef stew loaded with potato. Fridays she dishes up a haddock chowder and there are chicken pies and beef pies ready to go.

Katies’ Confections also bakes up cakes to order, and she has experience with wedding cakes.
