1938 – 2013

RANGELEY PLANTATION — Carole Knight Haley, 75, of Rangeley Plantation, died peacefully at her home on Monday evening, Nov. 25, with her family at her side.

She was born in Farmington on Aug. 2, 1938, the twin daughter of Ruth Knight Brewster. She married George Maurice Haley in Eustis on July 1, 1956. Carole worked as a cook at Doc Grant’s Restaurant from 1971 to 1989 and in 1989, began cooking at The People’s Choice Restaurant, retiring in 1999.

After retirement, she took care of her youngest grandchildren, which allowed them enjoyable summers at the beach. She also took a very active role in raising her two oldest grandchildren.

For the past 53 years, Carole has served as the town clerk for her beloved town of Rangeley Plantation.

Carole had a deep love for her family and friends. She was an extremely generous and compassionate soul — buying Christmas gifts for those who didn’t have much, and baking for basketball concessions and fundraisers. She never wanted to see anyone go without. She was a brilliant cook and was the proud owner of many sought after recipes, including her infamous zucchini relish. She had a passion for tag sales, visiting casinos, playing poker and buying scratch tickets.
