Dear Sun Spots: The Trinity Jubilee Center, a nonprofit soup kitchen in Lewiston, will host its third annual Empty Bowls Project on Sunday, April 29, at the First Unitarian Universalist Church on Pleasant Street in Auburn. Dinner will be served from 5 to 7 p.m. We are in need of ceramic bowls for this year’s event. If any Sun Spots readers would be willing to donate handmade ceramic bowls to help feed our hungry neighbors, we would be most grateful. Folks with bowls may contact us at 782-5700 or at jubilmin@gwi.net. Donors will be acknowledged in our program.

Here’s what happens to your donated bowls: At our Empty Bowls Project, local artisans and students donate ceramic bowls that are then purchased by attendees. The purchase of a bowl entitles attendees to a meal of soup, bread, beverage and dessert, all donated by local restaurants and bakeries. All money raised goes to the Jubilee Center’s soup kitchen.

The Jubilee Center serves five weekly meals – more than 35,000 meals yearly – to anyone in the greater Lewiston-Auburn area who is hungry. Thanks so much for your help. – Dell Caron Gray, event planner, Trinity Jubilee Center, Lewiston.

Answer: In addition to responses from readers, Sun Spots would like to share the following recipe from Lewiston Regional Technical College chef Dan Caron. He was happy to share this Chicken Cordon Bleu Soup recipe with readers, especially for those with new ceramic bowls in hand:

Ingredients: 1 quart light cream, roux (4 oz. melted butter and 4 oz. flour cooked for 3 minutes), 6 oz. cheddar cheese, 6 oz. feta cheese, 2 oz. Parmesan cheese, pinch nutmeg, pinch white pepper, 12 oz. diced chicken breasts, 8 oz. cooked diced ham, 1 qt. chicken stock, ¼ cup of white wine. Method: Place liquids (except white wine) into double boiler. When hot, add roux and stir until mixture thickens. Sauté chicken in 2 oz. oil until golden brown. Add to Bain Marie (double boiler). Deglaze pan with white wine, reduce to half, then add to double boiler. Add all the other ingredients, stir until cheese is evenly melted.

Dear Sun Spots: The activity department at Montello Manor does an annual yard sale in the spring to help raise extra money for the residents’ activity fund. This year it will be held from 8 a.m. to 2 p.m. Friday, June 8. I am looking for someone who would be willing to take the leftover yard sale items that we have at the end of the sale.
