Dear Sun Spots: In response to No Name, No Town’s request for Apple Treasure Cookies (Sun Spots column Oct. 3), here’s my recipe. It came from one of those women’s magazines years ago:

Apple Filling – This makes more than enough. We eat the leftovers on ice cream.

Ingredients:
1 to 3 finely chopped peeled apples (about 1 cup); ½ cup sugar; ½ cup cut up raisins; ¼ cup chopped walnuts or pecans; 2 tablespoons water or apple juice or cider; 1 teaspoon cinnamon; ¼ teaspoon nutmeg. Method: Cook filling 10 to 15 minutes and cool completely. Cookie Dough Ingredients and Method: Cream together 1 stick margarine, ½ cup brown sugar. Add 1 egg and ½ teaspoon vanilla, and mix well. Mix 1 cup flour, 1 teaspoon baking powder, ½ teaspoon cinnamon, ¼ teaspoon cloves and ¼ teaspoon salt, and add to wet ingredients. Add 2 to 3 tablespoons milk or juice and mix well. Add 1¼ to 1½ cups oatmeal and mix well, letting it sit awhile to soften oatmeal. Use two-thirds to three-quarters of the cookie dough for drop cookies. Press a well into each with a wet small spoon (I use a baby spoon) or a wet finger. Fill the well with the apple filling. Use one-third to one-quarter of the dough as a top over the filling. Bake at 350 degrees for about 10 minutes.

I sometimes make these for our church’s scholarship craft fair. My family likes them because there’s a little bit of magic in every bite and because there’s leftover filling. – V. Rogers, Otisfield.
