Dear Sun Spots: I love your column!

I have been trying to find the Pilot Crown crackers. They were large round shaped and also oblong. They were very good with chopped eggs.

Also, I cannot find canned codfish cakes. I believe they were Gordon’s. And why can’t we find tripe? I have asked everywhere. – M.S., Livermore Falls.

Answer: These crackers were discontinued in 1996. However, they were brought back after a fierce write-in campaign from Maine. They are currently only distributed in New England, according to Maine Goodies’ Web site www.mainegoodies.com. These large crackers are terrific with Maine chowder. Contact Maine Goodies, P.O. In the meantime, perhaps you and your family will enjoy the following recipe for Salmon and CodFish Cakes. Ingredients: 1 pound peeled potatoes, 3 ounces butter, 8 ounces tin pink salmon, 6 ounces skinned and flaked cod, 2 ounces chopped parsley, 2 ounces grated lemon rind, salt to taste, white ground pepper, corn oil. For garnish: parsley sprigs, lemon or lime wedges. Method: Cook potatoes in boiling salted water. Poach cod and drain well. Mash potatoes and add butter, drained pink salmon, cod and chopped parsley. Season to taste. Mix well and leave to cool. Turn mixture on to a well floured board. Divide into 8 same size pieces, shape into cakes. Fry cakes in the oil in a large flat-bottomed frying pan until golden and crisp. Drain on kitchen paper. Place on hot plates and garnish with parsley and lime or lemon wedges. Serve with garden peas, minted new potatoes, brown bread and butter.
