Dear Sun Spots: For the reader looking for pistachio cake: Ingredients: 1 package of white cake mix, one 3 oz. package of pistachio instant pudding, ¾ cup of cold water, add a some green food coloring to it, ¾ cup of cooking oil, 4 eggs, 1 tsp. of almond extract. Method: Mix pudding with cake mix, add water with food coloring in it. Stir water and oil into dry ingredients. Add almond extract. Add eggs one at a time, beating at low speed. After combining ingredients, increase speed of mixer and continue beating for five minutes. Grease a large angel cake pan, turn batter into pan and bake at 350 degrees for about 50 minutes. Place pan on rack to cool for 10 minutes, remove cake from pan and cool. Store in covered container. This cake freezes well. – No Name, No Town.
