LEWISTON – This summer the state-of-the-art Green Ladle Culinary Arts Building will host Lewiston Adult Education’s newest course: the culinary arts certificate program.
Designed to fully prepare participants for entry-level work in the food service industry, the summer program will provide more than 84 hours of instruction, plus opportunities for students to practice their new skills through work in professional catering functions.
The certificate program will teach students how to create soups, sauces, desserts and pastries, and will include hands-on learning opportunities in broil, breakfast, meat, fry, sauté, seafood and starch cookery.
In addition to cooking and baking, the program will emphasize business aspects of restaurant work. Participants will learn about the positions of operating a restaurant: menu writing, managing food costs, completing production, ordering procedures and grande manager.
The class will meet from 9 a.m. to 1 p.m. Tuesdays, Wednesdays and Thursdays, July 8 through Aug. 21. The fee is $300, plus a $125 lab fee. However, program participants will have opportunities to work as compensated caterers as part of their learning throughout the summer.
