Answer: Sun Spots was unable to locate the item in local stores, but if you visit Bed, Bath and Beyond, 730 Center St., Auburn, they can order one for you from their Web site. Dear Sun Spots: Last December, I cut out a recipe that came out in the Heloise column. It was for “Pistachio Ambrosia Salad.” I made it and everyone raved about it. Now, I can’t find it. I trust you’ll find it and publish it for me. Many thanks in advance. – Jean, Winthrop.


Answer: Sun Spots located the following “Pistachio Ambrosia” recipe online from a Heloise column from 2006. The recipe can be used as a salad or a dessert.

Ingredients: 1 small box instant pistachio pudding mix; 1 (16 ounce) can chunky pineapple; 1 (8 ounce) can crushed pineapple; 1 cup shredded coconut; 1 cup chopped walnuts or pecans; 12 to 16 ounces non-dairy whipped topping, thawed; 1 cup miniature marshmallows.

Method: Combine the cans of pineapple (including the juice), then sprinkle the pudding mix over the pineapple and let sit for a couple of minutes. Gently mix in the coconut and nuts, then blend in the whipped topping and marshmallows. Place in the refrigerator for at least two hours to let the flavors blend together, and then it’s ready to serve.
