DEAR SUN SPOTS: Do any of the Dunkin’ Donuts from Auburn to Augusta still carry chocolate powdered doughnuts? Maybe one store would be willing to make some for our out-of-state company when they visit? — No Name, No Town

DEAR SUN SPOTS: Is there anywhere in the local area where I can buy a chocolate doughnut without any sugar coatings? Thanks! — Doc Andrew, docandrew.andrew@gmail.com

ANSWER: Sun Spots, who has food allergies, cannot imagine that anyone who can eat doughnuts would choose a plain one, but they are available. While buying muffins for Mr. Sun Spots at the Winthrop Hannaford, Sun Spots noticed plain chocolate doughnuts in the bakery case.

So she checked with JoAnne, the bakery manager at the Lewiston Hannaford. She said they would be glad to make special-order doughnuts, just as they make special cakes. Call or stop in and let them know what you want, and it will be in the store the next day. JoAnne said not to expect them to be there at 7 a.m., as they will need time to execute your order.

As for Dunkin’ Donuts, most stores don’t make their own doughnuts any more, but rather get them from a central source. Norm, a store owner in Lewiston, said that if you want to place a special order you will need to do so before 1 p.m. for the following day.

Martina, the manager at Norm’s store, said that they can order most kinds of doughnuts, and that some stores still “finish” their own doughnuts (add toppings or fillings), but you will need to check with an individual store to see what’s available.

DEAR SUN SPOTS: Your column is informative, and I just love it.

To Claudette, inquiring about the sauce aux palettes de feve recipe, I, too, am of Canadian descent, and my mother made this white sauce, and I’ve made it for more than 50 years. I call it sauce blanche and put it over salmon pie or any fish.

I use 1 cup milk, 1/2 chopped medium onion, 4 tablespoons butter, sprinkle of black pepper, 1 teaspoon parsley, In a saucepan, sauté the butter and onions, heat milk until hot. Mix Wondra flour or corn starch with cold water (about 2 to 3 tablespoons of the flour with 1/4 cup of water until desired thickness).

Sprinkle parsley when done. I add peas or palette de feves (cut up). It’s yummy over potatoes, too. Good luck, Claudette. — Anita, Sabattus

DEAR SUN SPOTS: Thanks to all who wrote in with their recipes for the white sauce or palettes aux feves. They all sounded delicious, but the one closest to my mother’s was from Debbie Blais. Haven’t tried it yet, but will soon. Again, thank you all. — Claudette, No Town
