Don’t know what to get Dad this year for Father’s Day? Instead of buying him another tie, why not cook for him? You will show him just how special he is, and just in case he doesn’t have a favorite recipe, here are some to try.
Baked Chicken
1 T. margarine
2/3 c. Bisquick
1-1/2 t. paprika
1/2 t. salt
1/4 t. pepper
Vegetable spray
Heat oven to 425 degrees. Melt margarine in 13×9-inch baking dish. Combine Bisquick, paprika, salt and pepper in a plastic bag. Coat chicken pieces with vegetable spray, place in bag and shake. Repeat until well covered. Place in baking dish and bake for 35 minutes. Turn and bake for 15 more minutes.
Clingons
4-1/2 c. miniature marshmallows, divided
1/2 c. peanut butter
1/4 c. butter
3-1/2 c. rice Chex
3-1/2 c. corn Chex
1/2 c. M&Ms
Grease a 13×9-inch baking pan and set aside. Combine 4 c. marshmallows, peanut butter and butter in a large bowl. Microwave on high for 2 minutes; stir until smooth. Add remaining marshmallows, cereal and candy. Stir thoroughly. Spread evenly in pan and refrigerate for 1 hour. Pull apart to serve.
Cream Cheese Fruity Bagels
1 plain bagel, toasted and halved
2 T. cream cheese spread
1/4 c. fresh peaches, sliced
1/4 c. blueberries
Spread bagel halves with cream cheese spread and top with fruit.
Easy Coffee Honey Cake
4 eggs
1/2 c. shortening, melted and cooled
Juice of a lemon
Juice of an orange
5 c. flour
1 t. baking soda
3 t. baking powder
1/2 t. cinnamon
1/2 t. ginger
1/2 t. cloves
1/2 t. nutmeg
1 c. strong, black coffee
1 c. honey
1 c. brown sugar
1 c. sugar
1 c. nuts, chopped nuts
Preheat oven to 350 degrees. Grease a 9×12-inch loaf pan. Beat eggs well. Add shortening and fruit juices, and set aside. Sift together flour, baking soda, baking powder and spices, and set aside. Combine coffee, honey, sugars and nuts. Add pre-sifted dry ingredients to juice mixture, alternating with coffee-honey mixture. Bake for 1-1/4 hours.
Instant Lemon Cooler
Juice of 1/2 lemon
1 t. powdered sugar
1 egg
Cracked ice
Hard cider
Orange or lemon peel spiral
Combine lemon juice, powdered sugar and egg in a glass. Shake well with cracked ice and strain into another glass. Fill with hard cider. Insert orange or lemon peel spiral on rim of glass and serve.
Peach Shocker
2 peaches, peeled and sliced
1/4 c. instant dry milk powder
1/4 c. peach nectar
4 ice cubes
1/2 t. vanilla
Combine peaches, milk powder, peach nectar, ice cubes and vanilla in a blender and process until smooth. Pour in a glass and serve.
