I was thinking that it might be fun to invite a few friends to visit and have coffee and dessert. It’s relaxing to catch up on all the happenings of each other’s lives in a quiet setting enjoying a special sweet treat; whipped cream is always a necessity!

Here is an easy, very easy recipe that my Mom made for us when we were kids that isn’t the norm, unique and delicious! Having been a Depression Era child, she had many practical, inexpensive recipes that were nutritious and yummy. This recipe brings to mind the forthcoming season. Bon Appetit!

Summer Dessert

Ingredients:

1 pound mixed soft fruits

5 ozs sugar

2 Tablespoons Creme de Cassis (raspberry liqueur) optional but use it!

6-8 slices day old white bread, crusts removed and used in a meatloaf later.

Whipped heavy cream for serving

Prepare:

1. Place the fruits in a large pan with the sugar. Over low heat, very slowly bring to a boil, stirring carefully so that the sugar is dissolved. Cook over low heat for 2-3 minutes, until the juices run but the fruit still holds its shape. Add the liqueur.

2. Line a 28 oz. pyrex bowl, a pudding bowl is best (flat bottom) with some of the bread slices, cut them to fit tightly. Spoon in the cooked fruit and juices, reserving a little juice for later.

3.Cover the surface of the fruit with the remaining bread. Place a plate on top of the pudding to weight it down. Put the bowl in the refrigerator for at least eight hours, overnight is best.

4. When it is nearly time to serve, whip the cream. Take out the pudding and pour over the reserved juices to color any white bits of bread that may still be showing. Serve with cream. Unique, easy and delish.
