NORWAY — Pat Watson, director of Food and Nutrition Services at Stephens Memorial Hospital, has announced that the hospital has recently started composting.

Since Feb. 1, the routine in the dish room has changed. Instead of scraping food into trash cans to send waste to the Transfer Station, the food service team scrapes all compostable food for pickup. Any remaining trimmings or peelings that accumulate are collected in a receptacle called a toter, which is kept in the dish room. Each toter is outfitted with airtight liners. We Compost It! picks up the toters twice per week. They take the food waste to their facility and use it to create compost.
