MEXICO — Virginia “Ginny” Paradis, 67, was reunited with her beloved husband, Paul, her mom and her dad on Sunday, Jan. 14.

Ginny was born in Millinocket on Feb. 8, 1950. She was the daughter of Romus and Betty (Mascetta) Pasquine. Ginny graduated from Stearns High in 1968. She met her husband, Paul, when they both worked at the Chuck Wagon Railroad Restaurant in Lewiston. They then worked for Paul’s brother at the Chuck Wagon in Livermore Falls before getting married on June 26, 1983, and put their cooking talents to work when they opened the Covered Wagon Restaurant in Mexico on Feb. 14, 1984.

Anyone who met Ginny had an instant friend. She loved taking care of family, friends, staff and pets. Ginny enjoyed family vacations at Old Orchard Beach, reading, shopping, crocheting, baking homemade rolls for the restaurant and cheering on the Patriots. Her greatest joy, however, was her daughter, Christina. She loved visiting with Christina and Dan, and they were a significant part of her life.

Ginny is survived by her daughter, Christina O’Halloran, and husband, Dan, of New London, N.H.; a stepdaughter, Rebecca Lessard, and husband, James, of Lewiston; six grandchildren; two brothers, Paul Pasquine and his wife, Karyn, of Bangor, and Mike Pasquine and his wife, Cyndi, of Bangor; two sisters, Mary Pinette, of Millinocket, and Laurie Tibbitts, of Windham.

She was predeceased by her husband, Paul; a stepdaughter, Juli Chicoine; and a stepson, Paul Paradis Jr.
